About the French Bistro Classic Series

The Le Sud French Bistro Classic Series explores the regional cuisines and wine traditions that define French dining.

Each dinner highlights a different region of France through a carefully curated menu, wine pairings, and stories behind the food and culture.

Previous destinations have included Provence, with future dinners planned around other celebrated French culinary regions.

On Tuesday, July 14 at 6 PM, we travel to Normandy, a region celebrated for its coastal seafood, rich cream sauces, apple orchards, cider traditions, and timeless French comfort dishes.

Normandy is one of France's most beloved culinary regions, known for fresh seafood, rich cream sauces, apples, cider, and Calvados. This dinner highlights the flavors that have made Normandy a cornerstone of classic French cuisine.

This special edition of the French Bistro Classic Series coincides with Bastille Day, July 14th, France's national holiday.

About Normandy Cuisine

Located along France's northern coast, Normandy is known for its rich dairy traditions, fresh seafood, apples, cider, and Calvados. The region's cuisine reflects both the bounty of the sea and the abundance of local farms and orchards.

This menu was designed to showcase those classic Norman flavors through four thoughtfully prepared courses paired with wines and beverages selected to enhance the experience.

First Course

Coquilles St. Jacques

Baked scallops, shallots, garlic, herbs, wine, cream, cheese, butter, and baguette.

One of France's most iconic seafood dishes, Coquilles St. Jacques combines delicate scallops with a rich, creamy sauce and crisp breadcrumb topping.

Wine Pairing

Chablis (Burgundy Chardonnay)

The bright acidity and mineral character of Chablis beautifully balance the richness of the scallops, butter, and cream while highlighting the natural sweetness of the seafood.

Second Course

Grilled Peaches, Cucumber & Shrimp Salad

Served with rosé vinaigrette.

This refreshing summer course combines grilled fruit, fresh cucumber, and shrimp with a bright vinaigrette inspired by the flavors of Southern France.

Wine Pairing

Provençal Rosé

Dry, crisp, and elegant, the rosé complements the sweetness of the peaches while enhancing the freshness of the shrimp and cucumber.

Poulet à la Normande

Sliced cider-brined chicken with wild mushroom cream sauce.

This classic Norman preparation celebrates two of the region's most famous ingredients: apples and cream. The cider-brined chicken is paired with a rich mushroom sauce that captures the comforting flavors of French countryside cooking.

Pairing

Normandy Cider

A traditional pairing that reflects the region's deep connection to apples and cider-making. The cider's crisp fruit character enhances the savory richness of the dish while providing a truly authentic Norman experience.

Dessert

Mini Apple Tarte Tatin & Cheese

Served with French vanilla ice cream.

No Normandy-inspired dinner would be complete without apples. This classic French dessert features caramelized apples and flaky pastry, served alongside creamy vanilla ice cream and artisan cheese.

Pairing

Calvados Pommeau or Late Harvest Chenin Blanc

Both pairings complement the caramelized apple flavors of the tarte tatin while providing a smooth and memorable finish to the evening.
